About This Recipe

Nori tsukudani is a Japanese condiment made from pieces of nori seaweed simmered in soy sauce, mirin, and other seasonings until its a flavourful, savoury paste. Makes a great topping for a bowl of freshly steamed rice when you want something quick and tasty. Can also be used as an ingredient or to season other dishes.

Ingredients

  • 3 or 4 Nori sheets
  • 125ml Dashi (see notes for link to recipe)
  • 1 Tbsp Mirin
  • 1 Tbsp Sake
  • 1 Tbsp Soy Sauce

Instructions

    Cut the nori sheets into fairly small pieces with kitchen scissors or sharp knife

    Heat dashi in a small saucepan on medium heat and then add the pieces of nori and stir

    Once the dashi/nori mixture has thickened a bit add the mirin, sake and soy sauce and let simmer on low heat, stirring occasionally until almost all the liquid has gone.

    Nori Tsukudani is now ready to be used as a filling in onigiri, a topping on steamed rice or as a seasoning in other dishes

Notes

Nori sheets are readily available in large supermarkets and Asian grocery stores.

I make onigiri for my son's lunch each day and wrap the nori separately. He often brings back some of the nori sheets so this recipe is a good use of those as I don't like to waste them.
