Blanched Rocket with Sesame Dressing

About This Recipe
I had left over rocket leaves and didn't want more salad. So blanched them and added a creamy sesame dressing.
Ingredients
- 100g Organic Rocket leaves
- 2 Tbsp Sesame seeds toasted and ground roughly
- 1/2 Tbsp Soy sauce
- 1 Tbsp Brown sugar
- 2 Tbsp Japanese mayonnaise
Instructions

Put rocket leaves into a large bowl and pour boiling water over to blanch the leaves
Pour out the hot water and add fresh cold water to the bowl to stop the leaves cooking further.
Remove the blanched leaves from the cold water and squeeze to remove excess water.
Place the blanched leaves into a large bowl

Mix all of the sesame dressing ingredients together and mix into the blanched leaves
Sprinkle with a few whole toasted sesame seeds and serve
Notes
Sesame seeds - keep a few of the whole sesame seeds for topping .
Sesame seed dressing - do not overgrind the sesame seeds or they will become paste.
